The Fruits of Summer

Summertime means hot weather, lazy days, and fresh, ripe fruits. From apples to blueberries, mangos to apricots, it is the perfect time to sit down to a feast of delicacies that couldn’t taste nearly as good in any other season. Whether you plan on spending the day at the lake or cuddling in a hammock with a tantalizing novel, make yourself a treat with one of these great summer recipes. Each recipe features a summer fruit (or six!) and takes ten minutes or less to prepare!

Savory Fruit Salad

  • 1 cup blueberries
  • 1 cup chopped strawberries
  • 1-2 peaches, pitted and chopped
  • 1 cup raspberries
  • 2 bananas, sliced
  • 2 apples, chopped

Take all ingredients and combine in large bowl. Enjoy! Bonus points if you mix and match some of your favorite fruits into the salad!

  • 2 cups seeded, coarsely chopped watermelon
  • 2 tablespoons chopped onion
  • 3 tablespoons seeded, chopped Anaheim Chile
  • 2 tablespoons balsamic vinegar
  • ¼ teaspoon garlic salt

Don’t be fooled by the ingredients. This summer sizzler is the perfect mix of sweet and spicy. Add hotter chilies for more spice. Start with large serving bowl and gather watermelon, onion, and Chile pepper. Top with balsamic vinegar and garlic salt. Cover and refrigerate for one hour to blend flavors. Serve with your favorite dipping tool and wa-la! Masterpiece!

  • 1 package (10 oz.) mixed salad greens
  • 1 pint fresh blueberries
  • ¼ cup walnuts
  • ½ cup raspberry vinaigrette dressing
  • ¼ cup crumbled feta cheese

Toss all ingredients except cheese until dressing, walnuts, and blueberries are evenly distributed. Top with crumbled feta to add flavor. Easy as 1-2-3!
